- Pour 1 liter of whole milk into a heavy-bottomed saucepan. Place it over medium heat and let it come to a gentle simmer. Stir occasionally to prevent the milk from sticking to the bottom.
- Add the soaked rice in the milk. Stir well to ensure the rice is evenly distributed in the milk. Allow the mixture to simmer on low heat allowing milk & rice to cook slowly.
- Almost after 15 minutes of slow cooking, gradually add 1/2 cup of sugar to the simmering mixture. Stir continuously to dissolve the sugar completely. Adjust the sweetness according to your preference, add sugar & keep mixing.
- Crush 4-5 green cardamom pods to release the aromatic seeds. Add them to the simmering Kheer for a delightful flavor. Optionally, you can also include a handful of chopped nuts and a few strands of saffron for an added touch of richness.
- Continue to simmer the Kheer, stirring occasionally, until it reaches your desired consistency. It should have a creamy texture with soft rice grains.
